oh boy!

These are just too easy to make...

Coconut-Lemon Meltaway Cookies

Makes roughly 22 to 24 Cookies

Step 1.

Dry Ingredients

1 & 1/2 cups Almond Flour (you can make this, or buy it - however most store bought Almond flour is not raw)

1 & 1/2 cups dried Shredded Unsweetened Coconut (I used medium shred, but fine shred would also work well)

1/3 c Coconut Flour

2 big pinches of Salt

Mix all of your dry ingredients together - set aside and move onto the next step.

Step 2.

Wet Ingredients

In a small mixing bowl combine the following:

6 Tbsp Agave//or//Grade B Maple Syrup//or//Raw Organic Honey

4 Tbsp Lemon Juice

2 tsp Vanilla 

1 Tbsp Lemon zest (Tip: Zest your Lemon before you juice it)

Mix together all of the above ingredients...

Now, it's time to break out your Electric Mixer!

With your mixer on, slowly stream in the wet ingredients...

Almost done...

Step 3.

The Thickener

1/4 cup AND 1 Tbsp melted Coconut Oil

While your Mixer is on, stream in your melted Coconut Oil. Your batter will thicken fairly quickly as it mixes with the Oil and the oil cools down.

Oh boy!

Now it's time to form some cookies!

The final step is up to you.

You can either - 

Option 1. (This is the best way to have these cookies in my opinion) 

Warm them in either your Dehydrator or Oven (set at it's lowest heat, leaving the door cracked open). 

Warm your Cookies for 1 hour, maybe a bit longer 

Your finished Cookie will be dry on the outside and melt-in-your-mouth moist on the inside 

Place your cookies in the fridge after they've cooled down, letting them chill and set before you eat them.

Option 2. Place your Cookies to set/chill in the fridge for about an hour.

If you opt not to heat/dry your cookies the texture will be soft and moist.

PS!!!!!  i tried it leaving out all things lemon, and adding cocoa powder instead.  YUM...it is a great variation!

sister's craft day!

today we had our first sister's craft day.  there were a few who couldn't make it.  hopefully next time!

children's program...

 uh, maybe that's not the best title for this post.  but it works.  here are a couple pictures of the boys when they went to the military base in Leth- for a YM's activity...

...and we have some pics here of Tessa doing the Easter children's program at the library last night.  she and Lindy work with Michele...and they all do such a great job!  Shayna and I were there too, helping out here and there with the egg hunt.  it was kinda crazy!  Tessa is lucky.  she will be doing the children's program this summer pretty much full time...and she can do it the next few summers too...there are lots of students who would like their job...so they are lucky.

 the puppet show.  it was pretty funny, cause they didn't really plan it out ahead of time...so they just made up the actions as Michele read.  and they giggled.

good morning

the sunrises are so nice right now...we get up at the perfect time for some serious light shows!

well it's official.  we got conference tickets!  saturday afternoon.  obviously i would prefer sunday...i am not even sure the tabernacle choir will be there that session.  that will be sad!  but overall, i'm very happy about it all.  last fall i just KNEW we had to go to conference.  then when i heard how many the stake was allotted, i didn't hold out much hope.  but we are lucky!  so off we go April 3rd!

grad, spring, fox, taxes, school spirit

had a bit of a mess going on a couple weeks ago.  Ben was asking a girl to grad using balloons filled with shaving cream.  Tessa helped a LOT.  there was one balloon with just air that she had to pop that said "will you go to grad with..." ...inside of it...then in each of the shaving cream balloons were random answers.  Batman, Obama...etc.  and one answer was Ben Wright...of course.  

it took a bit of planning, but it worked out!

 signs of spring are popping up!  other than the crazy fog we've had the last few days.  hopefully that is the end of it, and things will start growing soon...

 we've seen a little fox hanging around outside lately.  today Pete pulled an "Austen Stevens" and went outside to be a wildlife photographer.

 he's not very shy...

 tax time.  it's easy for me...i just let Pete do it.  AND it's easy for him...being an accountant and all.  looks like this year we might get a little refund.  yay!

 also today...Tessa and Erica went up to Calgary to watch the boys and girl's basketball teams.  they are both in the provincial final games.  so they went up on a team-spirit bus...or something like that.  anyhow, here are the shirts they painted for the event.

okay, we are almost ready to pull out the globe and play that game.  Ben has started the mission paper process...

it's kind of a lot at first...shots, doctors, dentists...could be a tight squeeze fitting in the hep-B shot.  hmmmm...

anyone who visits, or who wants to make a guess please come over and pin a guess on the globe!  for family who live far away, just email me, and i will put your name on the globe.  i am actually going to have a sweet prize for the closest guess!  won't hear till may sometime, but still...

it is strange that Ben might know where he's headed before high school grad and his 18th birthday.    weird!!!

conferences and such

Friday I went to my annual Chinook Arch Library conference...
They are good.  One thing i like about them, is it makes my job feel more important.  We had a really good keynote speaker this time- of course I can't remember her name now.  I liked all my classes other than one.  For some reason it was all about app's that teens use these days.  We thought it would be about teens and library usage...but hey, whatever.

This week Pete has been sick a bit.  It's the man-cold!  He is feeling much better today.  

Today at church we had another mission farewell.  There is one more boy to go out ...one that is a year older than Ben...then it's all down to Ben!  The paper-process is beginning.  Ben met with the bishop and started.  I guess we start with shots/dental and medical first.  This is all strange, it feels like I'm still too young for this!  hahaha.  But Ben is awesome, and overall this is going to be such a great experience for him...we will pull out the globe now and start guesses!  

Last night was high school zones.  Pete, Ayden and Tessa went (and Ataya) and Ben and I were just at home.  Tessa and I worked yesterday, and i was pooped after the week I had!  So, we stayed home and watched some Sherlock.  

Right now I'm teaching the 11 year old primary class.  I am trying to like primary...but it just doesn't compare to young women's.  If certain kids are missing from my class, it actually makes it tolerable.  Like today.  

Ayden has had a bruise on his cheek from vigorous dancing in shop class earlier this week.  He punched himself.  hahahahaha!  It still makes me laugh.

I am looking forward to my "sisters" crafting day!  it is only a couple weeks away now!!  Gotta finish getting my secret project ready.

temple archives

today we had a little event at the library.  it was to learn about the temple archives put together at the U of L over the last 4 months.  it was started by the Rosenvals...and finished by some great people at the university library.  the link will soon be available on the U of L site, but it is not quite yet.  

we had in attendance many people from the temple, as well as some from the university.  and us!  it was really interesting and is going to be GREAT.  

i had to make soup for the lunch.  it was a bit stressful for me.  one night last week i woke up at 3:00 am and could not get to sleep from thinking irrational thoughts about transporting a crock pot full of soup.  the soup was made sunday, so it could be ready for this morning.  glad it's over!  it was a busy day...but turned out good.  i am sure once i can go through the archives i will find many photos of ancestors.  i found one picture of my parents so far...but will look more when the link is up.  

we had a pretty good snowstorm yesterday.  lots of wind and drifting.  but it's already melting away.  hopefully it will be gone by friday- when i have to drive into Leth for the annual library conference (yay).
this morning the wildlife seemed to be out.  we saw a baby bunny and a fox.  there has also been sightings of a cougar around town lately.  that is fairly usual.  makes me re-think my evening walks.  which really haven't been happening lately anyways.  sure wish i had a treadmill.
April is potentially a full month.  we are waiting to see if we get tickets for conference.  we are on a waiting list, but the chances aren't great.  ...easter...time out for women...and a trip to Jasper.  whew!  let's not forget upcoming soccer.  pete will be coaching Ayden again, and Tessa isn't playing this year.
